Ingredients

  • 1 whole chicken (about 4 pounds)
  • Salt and freshly ground black pepper
  • 1 large bunch fresh thyme
  • 4 garlic cloves, crushed

Instructions

  2. Remove the chicken giblets and rinse the chicken inside and out. Pat the outside dry.
  3. Sprinkle the inside of the chicken with salt and pepper. Stuff the cavity with the thyme, garlic, and lemon.
  4. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.
  5. Roast the chicken for 1.5 hours, or until the juices run clear when you cut between a leg and thigh.
